Nearly all of our ingredients, wine and beer are certified organic or come from producers who follow organic or regenerative practices. Whenever we use conventional products, they are clearly noted on the menu. Most items are sourced locally, though some come from further afield. Each choice is made thoughtfully and for reasons we believe in. While our sustainability principles are deeply held, our priority will always be to serve an excellent meal, without being bound by strict absolutes.
